From tropical fruits to sugar and spices, the bounty of the new world opened up endless possibilities for drinking.

Nubian Fix – 17
A long, refreshing twist on Sebastian Soto’s classic Cohi original. Captain Morgan spiced rum, Disarronno amaretto, lemon, passionfruit, and sugar, with a Bacardi 151 float and hit with nutmeg.

Mai Tai – 16
We love this drink. Trader Vic’s “out of this world” classic: a tiki mix of Appleton Estate rum, Pampero Seleccion, triple sec, orgeat syrup and fresh lime juice.

THE Clément Cobbler – 16
Not sure what to drink? This is a fruity and refreshing way to begin your evening. Clément Premiere Canne Rhum and a little sherry smashed with in-season fruits and served long.

The Zombie – 19
Made famous by “Don the Beachcomber” this fruity concoction of lime, grapefruit, three rums (Appleton, El Dorado, Bacardi 151), bitters, La Fee Absinth and grenadine creates the rum drinker’s tropical cocktail. Then we set fire to it!

Ladykiller – 16
This one will have you faint of heart and weak at the knees. A summer blend of fresh passionfruit, mint, vanilla, vodka & orange blossom. Delightful!

Though he kept his stash well hidden, the time has come to invite our friends to join us as we partake in this island dream.

Hemingway Daiquiri  – 16
Made by Constante of El Floridita in Havana, Cuba, for who must be the patron saint of booze writing, Ernest Hemingway. A refreshing, dry style of daiquiri, it is a bracing mix of Havana white rum, maraschino liqueur, lime and grapefruit juice.

Mary Pickford Cocktail  – 16
Created in the early 1900s by bartender Eddie Woelke at the Seville Biltmore Hotel in Havana. Mt. Gay white rum, fresh pressed pineapple juice, maraschino liqueur, and house-made grenadine, shaken and served up.

Rum Swizzle – 17
The classic Bermudan tipple. Gosling’s Black Seal rum, lime, house-blended falernum, and bitters swizzled over crushed ice, garnished with mint.

El Diablo – 17
A wonderful introduction to tequila, this is another drink from Trader Vic. Don Julio 100% agave tequila, crème de cassis and fresh-pressed lime juice is crowned with Bundaberg ginger beer and served long.

Pisco Sour – 16
The national drink of Peru! Peruvian Pisco, fresh lime, egg white and bitters – we finish ours with rhubarb bitters for an aromatic, flavourful drink.

Smokin’ Samoan Fog Cutter – 17
Our take on Trader Vic’s original. A show stoppin’ mix of Mt. Gay Eclipse white rum, brandy, Tanqueray, orange and lemon juices, sherry, and orgeat is topped with a light lychee foam and finished with an aromatic, flamed passionfruit shell.

Angostura Sour – 16
A complex drink that turns a sour on its head by using Angostura bitters as the base, and finishing with a little Appleton Estate V/X rum, triple sec, lemon juice. It’s sweetened and shaken to a foam with egg white. Served on the rocks.

Satchmo – 17
A sensual nightcap cocktail with a luxurious measure of Pampero Seleccion rum, Toussaint coffee liqueur and a dash of our own almond horchata. Built with crushed ice, finished with a dollop of cream, a dusting of nutmeg and fine dark chocolate.

Tommy’s Margarita – 18
All the way from Tommy’s Mexican Restaurant in San Francisco. This slightly sweetened style of margarita calls for the use of agave syrup, fresh-pressed lime juice and a large measure of Don Julio Reposado tequila.
